Herbed Chicken with Potatoes, Carrots and Lettuce

Here's another dish I made that's good for people like me who are suffering from acid reflux or GERD (Gastro Esophageal Reflux Disease) ---> Herbed Chicken with Potatoes, Carrots and Lettuce. It's tasty, it's colorful, and very, very healthy. Here's how you can do this too. It's very easy.

Chicken Jalfrezi, Cheese Naan and Daal

I discovered these three Indian dishes (Chicken Jalfrezi, Cheese Naan and Daal) when Jem and I dined at a Muslim restaurant in Ho Chi Minh. Jem was a vegetarian at that time (she's now a vegan) and Halal-certified restaurants were some of the places that offered food she can eat.

So what's so special about these three Indian dishes?

So Happy with my SM Cubao Loot

For only Php299.75, I was able to but this gorgeous set of kitchen cutlery that will enable me to prepare salads and dishes ta half the time it usually takes me. I got them during SM Cubao 3-day sale which will last until tomorrow. It consists of a whisk that can turn any liquid into froth, a vegetable carver and grater than can make vegetables look very appetizing even for those who do not eat vegetables, knives that doesn't become dull. Simply refrigerate them or cut an ice with it and the blades will be as good as new, a knife turned peeler that's very safe to use, an empanada maker that can help you start a business in baking. Look at some of the things they can do:
The Yo-Yo Whisk made it so frothy it doesn't fall

Perfect holes

Instant empanada maker

There are still more tricks and techniques. I can't wait to do them and show them to you. Til then! Bon appetit!

Baked Salmon, Eggplant Tzatiki and Japanese Rice

Justify Full
Three of the dishes that my hubby and I prepared over the weekend were Baked Salmon, Eggplant Enselada and Japanese Rice.

The Japanese rice was easy to do. I just mixed a packet of Clara Ole's Ora Mix Mo Japanese rice sauce with 2 cups of cooked rice and voila --- we have a very tasty rice dish.

Baked Scrambled Egg with Corned Beef

I guess by now you know how I love to take one egg in the morning, or at any time of the day as long as I get to eat one, for health purposes. I abuse my body so much that I know I should at least compensate by trying to eat healthy food.

So anyway, there's only so much one can do with an egg, right? Since I discovered that eggs can be baked, I thought of making my usual scrambled egg, but this time, I added a can of corned beef and garlic slices too!

Whenever I scramble an egg, I add about two tablespoons of fresh milk to make it creamy, then I dash a bit of ground pepper to taste. Since corned beef is already salty, I didn't add anymore salt. Then I put it some sliced garlic. I mixed everything together and poured it in my bakeware. I placed it inside the oven and baked it at 200 degree celsius for 10 minutes together with my usual vegetables which I grilled.

Voila! It tasted so wonderful! I ate it with my veggies and java rice. Yum.

Bon appetit!

Wimpex Oven Toaster Grill Rotisserie

Over the weekend, my husband and I treated ourselves with a brand new mini oven that can bake, toast, grill and practically cook anything. This Wimpex oven has space for extra large capacity of up to 30 liters and my husband, Peter, couldn't be any happier. It uses AC 220V/60Hz 1500W.

Peter will test it this coming Saturday. He plans to cook up a feast by baking some chicken and salmon. But then I couldn't wait. I was craving for some grilled vegetables and baked scrambled egg so yesterday, I used it.

I always eat one egg a day. Yesterday, I scrambled one and added a bit of fresh milk, salt, pepper and Italian herbs in it. I poured the mixture on a bakeware and placed it inside the oven.
