Tikoy Experiment for the Chinese New Year



We don't usually celebrate the Chinese New Year the way we do Halloween or Christmas. But my sister wanted to buy some Tikoy as pasalubong for her girlfriend back in Zamboanga. So Peter bought a small box of Tikoy as well. From what I remember, tikoy is supposed to be cooked by frying it in oil. Since I should refrain from eating oily foods as much as possible, Peter found a way to cook it and even made it healthier.

How to Make Spinach Tasty Using a Microwave


I'm now on my third week of medication and I realized that these dishes I'm making aren't really a big jump from my previous eating habits. The only thing missing from my diet now are those cakes, ice cream, chocolates and cocktails I used to enjoy after my healthy meal. Now, I have macapuno, sweetened langka, and honey for desserts. Anyway, bottom line is, it was stress and lack of sleep that really made me sick. If only I listened to my body sooner, I could still be enjoying my junk food now. Oh well. I don't mind. Now I'm really forced to eat healthily.

Anyway, since I can no longer use vinegar, tomatoes and onions for my salad dressing, I invented another way to make my spinach tasty and not bitter. I do this for my Kangkong and other leafy vegetables too. Here's how:

Kalye Juan: Yummy and Affordable Pinoy Dishes

The branch of Kalye Juan I've tried is the one at Mall of Asia. Pops was craving for a breakfast meal even if it was already 3pm that day. As for me, Filipino dishes have always been my favorite. So when we saw Kalye Juan's menu plus the affordable prices for such large servings of dishes they offer, we stayed put. Here's what we ordered for only Php500.00:

Baked Scrambled Egg with Corned Beef

I guess by now you know how I love to take one egg in the morning, or at any time of the day as long as I get to eat one, for health purposes. I abuse my body so much that I know I should at least compensate by trying to eat healthy food.

So anyway, there's only so much one can do with an egg, right? Since I discovered that eggs can be baked, I thought of making my usual scrambled egg, but this time, I added a can of corned beef and garlic slices too!

Whenever I scramble an egg, I add about two tablespoons of fresh milk to make it creamy, then I dash a bit of ground pepper to taste. Since corned beef is already salty, I didn't add anymore salt. Then I put it some sliced garlic. I mixed everything together and poured it in my bakeware. I placed it inside the oven and baked it at 200 degree celsius for 10 minutes together with my usual vegetables which I grilled.

Voila! It tasted so wonderful! I ate it with my veggies and java rice. Yum.

Wimpex Oven Toaster Grill Rotisserie


Over the weekend, my husband and I treated ourselves with a brand new mini oven that can bake, toast, grill and practically cook anything. This Wimpex oven has space for extra large capacity of up to 30 liters and my husband, Peter, couldn't be any happier. It uses AC 220V/60Hz 1500W.


Peter will test it this coming Saturday. He plans to cook up a feast by baking some chicken and salmon. But then I couldn't wait. I was craving for some grilled vegetables and baked scrambled egg so yesterday, I used it.


I always eat one egg a day. Yesterday, I scrambled one and added a bit of fresh milk, salt, pepper and Italian herbs in it. I poured the mixture on a bakeware and placed it inside the oven.

Scrambled Vegetables and Eggs





One egg a day can prevent breast cancer in both men and women by 24%. This is why I try to have one egg everyday. The manner of cooking doesn't matter. It could be sunny side up, scrambled, poached or whatever.As long as we eat one egg a day, we're helping ourselves get rid of breast cancer by 24%. So today, for brunch, I made scrambled eggs with vegetables.


Ingredients:
  • sliced onion
  • sliced bell pepper
  • sliced tomato
  • sliced garlic
  • 3 tbsps. of canola cooking oil
  • Italian seasoning or herbs
  • a pinch of salt
  • a inch of pepper
  • 2 eggs (for two servings)

Eggplant in Scrambled Eggs For Breakfast



I seldom buy eggplants coz from what I learned about it back in grade school, it doesn't really have any nutrients in it. Just water. But anyway, I was craving for eggplant lately so I tried to make some "Tortang Talong". Unfortunately, Peter wasn't around to help me get it done right so what I did was:

  • Sliced the eggplant in the middle without cutting it from its stem
  • Fried it on both sides
  • Put a dash of salt and pepper
  • While it was frying, I poured a bowl of 2 scrambled eggs.
  • When the scrambled eggs were cooked, I folded the whole thing on both sides.

It was pretty tasty. It even lasted until lunch. Plus, I know it's quite healthy. According to an article on Reader's Digest, an egg a day will help reduce by 24% the likelihood of breast cancer in women. So these days, I try to eat 1 egg a day. I just have to come up with other ways of cooking it. ^_^

What Have I Been Cooking Lately?

I took up a monster work schedule the past month and it's only now that I am able to recover a little more quality time for myself and for my cooking. And on those rare occasions that I or my hubby was able to prepare something to eat, I enjoyed each and every dishes we made. We also made sure that they're all healthy and delicious at the same time. Let me share with you those few home-cooked dishes I had. The rest of the time, I was either eating out , cooking the same dishes, or munching on fruits, raw vegetables, and chocolates. ^_^
