Pan Roasted Chicken and Potatoes In Red Wine Reduction



Here are the ingredients of this very tasty chicken dish:
  • one large onion chopped
  • 6 or so cloves of garlic chopped
  • a cup of baby potatoes, sliced into thin medallions
  • 1 cup of spaghetti sauce
  • half a cup of wine
  • 3 chicken thigh fillets
  • 3 chicken thigh fillets
  • half a cup of wine
  • 3 chicken thigh fillets
  • dried herbs (basil, rosemary and thyme)

Once the ingredients are prepared, all you have to do now is follow these procedures:


  • Brown the chicken thighs on both sides in a hot pan until chicken is half cooked.
  • Remove chicken from the pan.
  • Saute the onion in the drippings.
  • Throw in the garlic. Saute until lightly brown.
  • Add the dried herbs.
  • Deglaze the pan with the wine.
  • Let simmer for 2 minutes.
  • Add the spaghetti sauce and the potatoes.
  • Simmer on low until chicken is well cooked and the potatoes are nice and soft. Season with salt and pepper to taste. (The potatoes can be replaced with the same amount of mushrooms)
