The Red Rice and Vegetable Diet

We originally made this blog to journal the food we make at home. But because of time constraint brought about by our busy work schedules, we ended up eating out more, or ordering food delivery or take out. Moreover, when we travel, we of course have no choice but to dine at a restaurant we like which we also share here (more to come on this after this post).

Lately though, Peter and I have fallen into our old routine of making our own food at home. This was due to the following factors:

1. We're not getting any younger and if we want to eat healthily in order to lose weight then we might as well start making our own food again.
2. Making our own food at home considerably brings down our food expenses.
3. We have complete control over what we want to eat.
4. Peter recently resigned from his job in order to set up his own digital PR/Advertising business. He's currently enjoying doing work from home half the time which means, if he doesn't want to keep eating what I make (mostly Adobong vegetables), then he has no choice but to start making dishes for us since he is the better cook anyway. ^_^

Below are some of the dishes Peter prepared the past week since we got back from our Cebu-Bohol-Siargao trip...

Strawberry Salad with Chicken Bits

This has been my diet for the past week, well, since I got back from Baguio basically. I bought some lettuce and strawberries so I really have no choice but to eat them. The other day, I ordered some dishes from Chic-Boy, one of which was a whole roasted chicken, that I haven't finished yet so you can also see chicken bits in my strawberry salad.

Roasted Chicken and Garden Pasta Salad

Since the year started, we noticed that if we are not eating out, we normally have food delivered at our house (which reminds us, we better start taking pictures of food we order so we can feature them here on our food blog). But on occasions that we do have the time to prepare something healthy to eat, we usually prepare something like this...

Angelina Pizza and Pasta @ Malapascua

I want to share with you the scrumptious Italian dishes I had with my team that time we went to Malapascua. On our first night there, Connie brought us to this secluded Italian restaurant at the other side of the island, Logon Beach Resort. The name of their restaurant is called Angelina Pizza and Pasta.

It's quite a romantic place. I saw a few couples, all foreigners, sharing a meal together. How I wished Peter was there!

We walked several kilometers from Exotic Dive Resort and it was a long and hard walk. Even when I was wearing my contacts, I almost stumbled a couple of times. Good thing Ian was there to guide the way. Come to think of it, we should've brought a flashlight. It was my second time in Malapascua and I should've known better than to walk in the dark coz unlike other beaches, Malapascua at night can really get very dark and quiet. Watch out for uneven sidewalk and dog poop!

But the long walk was worth it. Everything we had was just so delicious! Too bad, I didn't get the names of the dishes. I was too hungry at that time to care. But here are the photos:

Media Noche

Peter and I really did hibernate during the holidays. We didn't go out nor attend any parties at all... oh except for our village party which Peter went to coz he's sociable like that. Even then, Peter still prepared some dishes that can last until the next day. But, unlike the previous years, we didn't anymore do the 13 kinds of fruits coz I found out that shopping for them stresses Peter out. It's not something that he enjoys doing, plus we don't really believe completing the 13 kinds of fruits will bring us luck. The last couple of years, many of those fruits just got rotten coz we couldn't eat them all in a week's time. So, just the regular fruit groceries and none of those superstitious luck and wealth charms. No jumping up and down either. We had a quiet and peaceful New Year's Eve. We still believe though that we're gonna get richer & happier this year. That's what matters, right? ^_^

Anyway, here are the simple dishes Peter prepared last New Year's Eve:

pasta in olive, mushroom and tomato suace
