My Zoobic Diet

We went to Zoocobia and Zoobic last weekend for free! Wee! And as part of the tour, we were also provided with lunch and dinner. Not that I was expecting an ostentatious display of exotic food, but I was hoping for something more... delectable. After all, we did walk a lot and it was so very tiring. Oh well. Thank God for the yummy Sisig Siopao breakfast we had at 7-11 that morning, at least I wasn't that hungry.

But anyway, I was happy with what they served us. For lunch, there was a mini buffet of ham, eggs, salad, toasted bread, juice and french fries. It was enough to keep our strength up. It just didn't go well with the time of day. This meal is more of a breakfast than lunch. I was hoping for adobo or kaldereta. Hehehe. Peace!

For dinner, I started salivating the moment I saw the waiters handing out Chicken Inasal to the other people we were with. Unfortunately, by the time they got to us, there was only fried pork left. Blech! I personally don't like pork and this one wasn't really particularly tasty. Oh well. Gotta be thankful for free food. At least, I didn't feel so bloated that my Zoobic getup actually felt quite loose after the trip. Hehehe. Peace!

Scrambled Vegetables and Eggs

One egg a day can prevent breast cancer in both men and women by 24%. This is why I try to have one egg everyday. The manner of cooking doesn't matter. It could be sunny side up, scrambled, poached or whatever. As long as we eat one egg a day, we're helping ourselves get rid of breast cancer by 24%. So today, for brunch, I made scrambled eggs with vegetables.

Ingredients:
  • sliced onion
  • sliced bell pepper
  • sliced tomato
  • sliced garlic
  • 3 tbsps. of canola cooking oil
  • Italian seasoning or herbs
  • a pinch of salt
  • a inch of pepper
  • 2 eggs (for two servings)

Pinakbet By Accident

I rarely have the time these days to really cook. Add to that the fact that I am becoming more and more conscious about my health. So most of the time, I'd just chop some raw vegetables, dash some herbs and spices, pour a little vinegar and olive oil, and voila --- that's my meal for the day!

But one time, I was really craving for rice and some flavorsome dish. So while I wait for my rice to get cooked, I just started putting some chopped vegetables on a pan. I didn't even measure them. I just used my instinct.

Pesto Pasta and Tomato Pizza Bread

Pesto pasta is so easy to prepare.

Have your pasta cooked first. You may either use the spaghetti type, or Penne or the spiral type. As you wait for it to get cooked, prepare your pesto sauce.

Heat a pan with about 2 tbsps. of vegetable oil, put your pesto mix which you can buy at any grocery store, stir until it’s hot enough. Don’t let it reach boiling point. Set it aside.

Go back to your pasta.Once it’s cooked, strain the water from it. Put it in a casserole and add your pesto sauce. Mix.

For your tomato pizza bread, here’s what you do:

Get two pieces of tasty bread and cut them into four. Spread a bit of Kraft pizza cheese whiz on each piece, top it with a slice of tomato and olive, then toast it. Once done, you may serve it with your pesto pasta.

Bon appétit!
