Grilled Edam Cheese and Honey Sandwich


I've been eating a ton of green vegetables lately that I wanted to taste something different, even if maybe they're not really healthy for me. Cheese, especially Cheddar and Cream Cheese are a no-no for people who have acid reflux disease or GERD. But I wanted cheese! So the next best thing is to have cheese with low fat and skim milk and that's Edam cheese. Here's how I did it:

SM Funky Bowling Treats

Like I told you on my other personal blogs about the SM Funky Bowling thing we went to last weekend, I didn't really get to do the funky bowling stunts coz one: I didn't want to ruin my attire (vain!); and two, I just didn't feel like it. I now regret my decision and I will really try to go to the Halloween Funky Bowl happening this coming weekend. Nevertheless, I still enjoyed myself by cheering my team and enjoying the simple yet delicious dishes that were served that evening:

Impressca and the Story Behind the Healthy Food Choice


I had the opportunity to try out the salad and sandwich offerings at Impressca when I went shopping at the 3-day sale of SM Cubao. They had just opened that same day and I have a feeling that it will be a brand that many food lovers, particularly vegetarians and health conscious folks, would surely patronize and enjoy. I read about how it started and I was very inspired. I thought, why not publish here the very essay written by its owner on how it all started? So here it is. The following is an essay by Elizabeth Ella Echano, the brain behind the new and very impressive food outlet, Impressca.


“For the Love of Creation”

I came from humble beginnings but with enormous dreams. My parents were teachers, thus, I was nurtured to broaden my horizon leading to a personal intuition towards entrepreneurship. I learned in college that success is “One percent luck and ninety-nine percent sweat”. In everything I do to try to gain headway in my pursuit for a meaningful business, I am always guided of this line from Martin Luther which consistently become my cling in every step I’m on … “I have so much to do (today) that I should spend the first three hours in prayer.” I am starting my entrepreneurial story with the above lines because IMPRESSCA’s birth is 100% guts plus 100% faith.

Whopper Tuna Sandwich


Every time I want to go on a diet (meaning, I try not to eat rice), I make myself some sandwich. But see, I have a huge appetite and one tiny sandwich won't be enough. So, what I do is make one huge sandwich as long as I make sure that I use wheat bread and fill it with a healthy tuna spread in between the slices of toasted or grilled wheat bread.

Grilled Tuna Sandwich with Roasted Bell Pepper





Like what I said on my previous blog post, I am now trying eat more healthily whenever I can. I also try to cut back on ice cream and Coke because sugar is just simply bad for the body. I read in a health magazine before that a table spoon of sugar reduces the body's defense mechanism at 12%! So if I eat lots and lots of sweets, I can actually shut my body down. No wonder I feel lethargic, lazy and sleepy whenever I have one of those ice cream flavors and chocolates I like.

Oh well. Like they say, if you wanna live long, you have to eat less.
So today,Peter and I had a healthy and scrumptious grilled tuna sandwich with roasted bell pepper.

Tuna and Vegetable Sandwich + Hot Pot of Green Tea

I plan to lay low on butter and oil the rest of the month... or at least for this week. All these yummy food I've been preparing and eating are making me feel heavy and lethargic that's why today, I did not only start doing kickboxing and yoga again, but I only had a healthy tuna and vegetable sandwich for both breakfast and lunch plus a hot pot of green tea.




While I was toasting two pieces of wheat bread, I opened a can of tuna, drained the liquid and put the tuna contents in a little bowl. I added the slices of onions I did earlier, put a dash of salt, pepper, basil, rosemary, cinnamon, and thyme then poured around 2 tbsps. each of mayonnaise and ketchup then mixed them all together.
