For the past couple of weeks, Jen's day usually starts at around 2:00AM, around the same time I normally start heading off to dreamland. To make sure that she would have a nice meal even while I'm sleeping, I often prepare dishes for her at around midnight.
Today for instance, I made her a no crust spinach and corn quiche. It's one of those quick and easy recipes that look a lot more impressive than they are difficult. This one is quite tasty too and arguably healthy because it's mostly just veggies. Try it out for yourself. You will need:
- 2 big handfuls of spinach, about 300 grams, trimmed from the stems
- half a cup of whole corn kernels
- 1 medium red onion, sliced thin
- 1 medium red bell pepper, sliced thin
- 4 to 6 cloves of garlic, minced
- 3 medium eggs
- half a cup of grated cheese
- salt and pepper to taste
- butter for frying and coating your baking dish
So you start off by sauteing your onions, once they're translucent, throw in your garlic and brown them lightly. You then add your corn and then your bell pepper. Season with some salt and pepper. Toss in your spinach leaves and allow for them to wilt. Remove from heat and allow to cool a bit. You then butter up a baking dish and dump your spinach and corn mixture in there, like so:
You beat the eggs until nice and frothy and you them mix in your cheese. Season with some more salt and pepper if you like and then you dump all of that into your baking dish, like this:
Then you cover that up with some tin foil and pop it in the oven at 250°C Then you can go ahead and dick around the web for 20-25 minutes. When you return to your dish you should end up with something like this:
Just to be sure, jab a toothpick right smack in the middle. If you pull it out clean everything's set. If not, pop it back in the oven for another 5 to 10 minutes. Now you can slice that up and serve with some toast.
