Eating My Own Harvest = One Healthy Meal


I've shared on my projects blog before that I've already been harvesting my own Kangkong and Okra. Just recently, my Tomatoes and Eggplant have started bearing fruits, and this morning, I've also harvested my own green peppers (sili). Suffice it to say, that soon, I'll be pretty much eating my own harvest on a more regular basis (I hope) but for now, here's what I prepared for lunch:


I took out the kangkong leaves from the stem, washed them and set them aside.

  I got my okra, sili and tomatoes and sliced them up. Then I mixed everything on a plate with a tablespoon of apple cider vinegar, a tablespoon of soy sauce and a tablespoon of honey.


 I popped it in the microwave and voila!

I now have a very healthy salad plate which I paired with brown rice, smoked bangus, hardboiled egg and a glass of soya milk (from Soyfresh Susu Soya).

  1. It looks really healthy! Just that, maybe you can just blanch the veggies in very hot water then put the dressing after instead of microwaving it! That way, you're sure to keep in all the nutrients of the veggies more. Cheers to more savory healthy dishes!
